One of my favourites.......




Brown Rice Salad

1 cup currants
2 red capsicums, diced
1 spring onion, diced
1 bunch parsley, diced
3 tbsp sunflower seeds
250g cashew nuts
3 cups {cooked} brown rice

Mix all salad ingredients together except cashews and sunflower seeds.


Dressing:

3/4 cup olive oil
4 tbsp soya sauce
2 tbsp honey
5-6 cloves garlic

Mix together and add with cashews and sunflower seeds just prior to serving!!

Eat and enjoy! It is delish!

ps) In the picture above, I didn't have currants so I improvised with the sultanas in my cupboard......I don't recommend this ;) and with the dressing, I don't always use it all, so add it slowly!!!

the only way I eat brown rice! Oh I love this salad! It has been a while since i've made it. thanks for reminding me... there is just something about rice, cashews and currants that just TASTES SOOO GOOD!

Oh yummy. I just bought some recipe cards and a box to start reorganizing my recipes. This looks tasty. I've never cooked brown rice (still) but I enjoy the times I've eaten it. If I rice-cooker it do I have to do anything special?

I use the rice cooker and I don't do anything different :) 1 1/4 cup of water to 1 cup of rice!! cooks it perfectly! xo
